INGREDIENTS
  • 2 cup Almond flour
  • 1/4 cup Psyllium husk powder
  •  1 tbsp Gluten-free baking powder
  •   1/2 tsp Sea salt
  •   4 large Egg (beaten)
  •   1/4 cup Coconut oil (measured solid, then melted)
  •   1/2 cup Warm water
INSTRUCTIONS:
1.     Preheat the oven to 350 degrees F (177 degrees C). Line the bottom of a 9×5 in (23×13 cm) loaf pan with parchment paper.
2.     In a large bowl, stir together the almond flour, psyllium husk powder, baking powder, and sea salt.
3.     Stir in the eggs and melted coconut oil, then finally the warm water. Try to mix it well to create air bubbles.
4.     Transfer the batter to the lined baking pan. Smooth/press the top evenly with your hands, forming a rounded top.
5.     Bake for 55-70 minutes, until an inserted toothpick comes out clean and the top is very hard, like a bread crust. (Important: It will pass the toothpick test before it’s completely done, so make sure the top is very crusty, too.) Cool completely before removing from the pan.

KOKOLULU PORRIDGE
The Famous KKLL Breakfast Porridge – Here is a recipe that is a favorite among guests here at Kokolulu farm.
We’ve been eating and serving it to our guests for over 15 years
Soak seeds and nuts overnight before using. Discard soak water.
In order of what I use the largest amount of….
(This is gluten-free; I use all organic seeds and grains. A very alkaline, protein-rich dish!)
Buckwheat (NOT a wheat)
Millet
Whole Oats
Tiny lentils
Forbidden rice
I don’t usually soak the following but add them before cooking….
Quinoa
Amaranth
Goji berries, raisins, almonds and/or walnuts, etc.
Cinnamon, nutmeg, cardamom
Top with: kelp powder, ground flax seed, ground chia seeds, hemp seeds
To make hemp or chia milk:  I use 1 TBS hemp seed per cup of filtered water and blend in vitamix two full minutes.  Only lasts a couple days.
For pancakes, I use leftover cereal at the end of the week.  Add the hemp, chia, flax and anything else as desired.  I add an organic egg or two, organic gluten-free pancake mix, a little baking soda and baking powder and cook on fry pan in coconut oil.  Top with Maple syrup.

The American Cancer Society and the American Institute for Cancer Research both estimate that more than 30% of cancer can be prevented through healthy diet, physical activity, and maintaining a healthy weight.

Nutrition is integral to healing throughout the entire cancer journey, but also important to disease prevention. Often, clients do not know or understand what eating an optimally nutritional diet means and respond favorably with education and guidelines.

The nutritional program at Kokolulu Farm and Cancer Retreats teaches Food as Medicine concepts for prevention to disease as well as a solution to help fight cancer and disease in general, which include easy-to-understand-and-follow nutritional guidelines.

Food has the power to prevent much of the chronic illness we experience today. Food is information carrying detailed instructions for every gene and every cell in the body, helping them to renew, repair, and heal or to be harmed and debilitated, depending on what one eats. Certain “non’-foods inflame one’s gut and cells, leading to whole-body inflammation that manifest as pain, allergies, headaches, fatigue, and depression and that leads to weight gain, diabetes, and heart disease.

At Kokolulu Farm, guests will learn about the foods that research shows to be most beneficial to healing, understand which foods are most harmful to health and healing, know how to do healthy food preparation and shop for live, healthy foods, and find out how to grow at least a few of their favorites without using harmful chemicals.

Research has shown people learn faster when it is hands on and fun. Teaching our Healing Foods Classes is an effective approach that we have         witnessed firsthand. During the time in the kitchens we are able to teach life skills, nutrition, and simple techniques while offering the scientific facts to people in a digestible format. We are able to inspire participants to make lifestyle and dietary changes that could help save their lives by showing them how to incorporate the right foods that build their immune system to prevent and battle disease.
